Rack of lamb is a premium and flavorful cut that comes from the rib section of the lamb.
Known for its tenderness and rich taste, a rack of lamb is a larger, whole cut that includes multiple rib chops attached together.
It typically consists 8 rib chops, weighing around 2 lbs. It makes for an impressive and elegant centerpiece for any meal and is quite easy to prepare. The meat is delicate, with a fine grain and marbling that contributes to its juicy, tender texture.
You can serve a rack of lamb in several ways:
Frenched Rack: a few inches of meat is removed from the end of the bones, leaving a clean and elegant appearance.

Since the internal temperature of cooked meat will rise, remove it from heat whenever it is 10 degrees lower than your desired doneness and give it time to rest before cutting so you don’t release all of the juices.
