Despite Punxsutawney Phil’s Ground Hog Day prediction of an early spring, February is proving to be one of the most frigid months throughout most of the country. One sure way to combat the seemingly endless winter weather is to whip up a steaming pot of California Lamb Chili. It’s as healthy as it is tasty, nutrient-filled ground lamb with chickpeas, also known as garbanzo beans. Serve with cornbread and a tossed green salad and you have a simple but sumptuous comfort meal perfect for a quick weekday dinner or a casual weekend supper in front of a roaring fire.
