Greek-Style Walking Taco with Ground Lamb

Directions
- Heat pan and add aromatics: Heat extra virgin olive oil in a large skillet over medium heat. Add minced garlic and cumin seeds and cook for about 1 minute until fragrant.
- Cook lamb: Add ground American Lamb to the skillet, breaking it apart with a spoon. Season the lamb with salt, fresh ground pepper and oregano. Cook until browned and cooked through, about 5-7 minutes. Remove the skillet from heat and set aside.
- Prepare toppings: In a large mixing bowl, combine diced cucumber, diced tomatoes, red onion, lemon zest and juice, herbs, 2 tablespoons olive oil and salt and pepper to taste. Fold in ¼ cup crumbled feta cheese. Toss gently to combine.
- Assemble tacos: To assemble the walking tacos, open and fold down the individual bags of pita chips. Spoon the cooked ground lamb mixture over the pita chips in each bag. Top the lamb with the prepared Greek salad mixture, a dollop of tzatziki sauce, more feta and fresh herbs.
- Serve: Serve immediately with lemon wedges on the side for squeezing over the tacos, if desired.
