Directions
Marinate the Lamb
- First, combine the olive oil, lime juice, garlic powder, chili powder, smoked paprika, cumin, salt, brown sugar, and cayenne in a bowl.
- Then, add the sliced American lamb.
- Next, toss well to coat.
- After that, marinate for 30 minutes at room temperature or up to 2 hours in the refrigerator.
Preheat the Oven
- Heat the oven to 450°F.
Prep the Vegetables
- First, add the sliced onion and bell peppers to the sheet pan.
- Then, drizzle with olive oil.
- Next, sprinkle with salt.
- After that, toss to coat.
- Then, spread into an even layer.
- Finally, add the lamb over and around the vegetables in a thin layer.
Warm the Tortillas
- Stack the tortillas and wrap loosely in foil.
- Place the packet on the oven rack or on a corner of the sheet pan during the last 5 minutes of roasting.
- Warm until the tortillas are pliable.
- Alternatively, place tortillas on a second sheet pan and cover tightly with foil.
- Warm in the 450°F oven for 3 to 4 minutes.
Serve
- Pile the lamb and vegetables into warm tortillas.
- Top with avocado, crema, cilantro, or cheese.
- Serve with lime wedges.
