
Lamb Smashburgers with Red Onion Jam

Directions
Prepare the Red Onion Jam
- Heat the olive oil in a skillet over medium heat.
- Add the sliced red onions and kosher salt.
- Cook, stirring occasionally, for 15 to 20 minutes until the onions are soft and caramelized.
- Stir in the balsamic vinegar and honey.
- Continue cooking for 2 to 3 minutes until the mixture thickens into a jam-like consistency.
- Remove from the heat and let the red onion jam cool slightly.
Season the Lamb
- Season the ground American Lamb with kosher salt and black pepper.
- Divide the lamb into 4 equal portions.
- Roll each portion into a ball.
- Preheat a large skillet or griddle over medium-high heat.
Cook the Lamb Smashburgers
- Place one lamb ball onto the hot skillet.
- Immediately press it firmly with a spatula to create a thin patty.
- Repeat with the remaining lamb balls.
- Cook for about 3 minutes on the first side until a dark crust forms.
- Flip each patty and cook for another 3 minutes, or until your preferred doneness.
- During the final minute, place one slice of cheese on each patty and allow it to melt.
Prepare the Mustard Mayo
- Combine the mayonnaise and whole grain mustard in a small bowl.
- Stir until smooth.
Assemble the Lamb Smashburgers
- Toast the hamburger buns in a skillet with a little olive oil until crisp.
- Spread the mustard mayo over the bottom bun.
- Add a lamb smashburger patty.
- Spoon a generous amount of red onion jam over the patty.
- Top with the remaining bun.
- Serve immediately while warm.
