California Lamb Chops with Fresh Fruit Salsa

Brush lamb chops with olive oil and season with salt and pepper; set aside. In medium bowl, combine ingredients for salsa; mix well and set aside. Grill or broil lamb chops 4 to 6 inches from medium heat until desired doneness (160°F for medium rare). Serve with generous portions of salsa.



  • 4 California lamb loin or rib chops, 1 to 1-1/2 inches thick
  • Olive oil; as needed
  • Salt and pepper; to taste


  • 2 fresh peaches or 1 fresh mango, cut in bite-size chunks
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Red pepper flakes; to taste
  • Salt and pepper; to taste
  • Juice of 2 fresh limes
