In a small saucepan, heat coffee, beer and grilling sauce. Bring to a low boil and cook until reduced by half. Set aside.
Preheat grill. Season lamb chops with salt, pepper, and paprika. Grill over medium heat to mark on both sides. Baste ribs with grilling sauce and continue to cook until desired doneness (135-140°F). Let rest at least 5 minutes. Glaze with remaining sauce before serving.
