Grilled California Lamb and Vegetables

Preparation

Brush lamb lightly with olive oil; season with salt and pepper. Arrange on grill 4 to 6 inches above medium-hot heat. Brush vegetables with olive oil; season with salt and pepper. Arrange on grill. Turn chops, then vegetables. Cook lamb for 6 to 8 minutes until medium rare (145°F) to medium (160°F) and vegetables until tender. Serve while very hot.

Ingredients

  • 4 California lamb chops, about 1-inch thick
  • Olive oil; as needed
  • Salt and freshly ground pepper; to taste
  • 2 red bell peppers, quartered and seeded
  • 2 yellow bell peppers, quartered and seeded
  • 2 red onions, quartered
  • 2 zucchini, sliced thick
  • 2 yellow summer squash, sliced thick
